Preheat to 475°F & fill tall pan with 1/2 inch water

Make crust: mix graham cracker crumbs and cinnamon, add margarine, mix well

Line spring form pan with parchment paper (bottom). Press crust to bottom of spring form pan and 2/3 of the way up the sides. Wrap bottom of spring form pan with foil (water tight barrier). Keep cool in freezer.

Make filling: Mix cream cheese, suguar, sour cream, and vanilla until smooth. Scrape down mixing bowl. Whisk eggs & add to mixture. Mix eggs in until just incorporated.

Pour filling into crust & place cake into pan of water. Bake 12 minutes.

Turn down oven to 350. Bake for ~50/60 minutes or until top is golden brown.

Remove cake from oven and water pan and cool on wire rack.

Make toping: mix sour cream and suguar. Spread over cake.

Cover cake and refrigerate at least 4 hours.
