Combine flour, starter, salt in bowl. Add water little at a time and mix with hands to make a soft dough
Coat working area with olive oil. Then knead dough there for 10-15 min... Smooth and elastic
Place dough in lightly oiled bowl and cover with cling film. Leave to rise in a warm place for 5 hours or until at least doubled in size.
Knead dough until it is smooth, knocking the air out. Roll into a ball and dust with flour.
Put dough in well floured basket and leave rise for 4-8 hours
Put tray half filled with water on bottom oven shelf and preheat the oven to 425F
Tip risen dough onto a lined baking tray. Bake for 30 minutes. Reduce heat to 400F and bake for 15-20 min. Cool on cooling rack.
