Feed your sourdough starter. Timing in regards to the other steps is not important, just wouldn't do this RIGHT before using in the stiff levain build. Discard ~80% of the existing starter. Add around 3/4 cups flour and 1/4 cup water, mix. Amounts are not exact, want consistency to be set but not soupy. Can sit out for an hour (not required), then back to the fridge
