WEEKLY -- Maintaining Sourdough Starter

Feed your sourdough starter. Timing in regards to the other steps is not important, just wouldn't do this RIGHT before using in the stiff levain build. Discard ~80% of the existing starter. Add around 3/4 cups flour and 1/4 cup water, mix. Amounts are not exact, want consistency to be set but not soupy. Can sit out for an hour (not required), then back to the fridge

HOURS BEFORE BAKING -- Stiff Levain Build

To a medium sized mixing bowl, add 1.0 oz sourdough starter. Add 4.9 oz flour followed by 3.0 oz water

Mix until ingredients are uniformly distributed. Cover and let sit at room temperature for 12 hours

HOURS BEFORE BAKING -- Final Dough Build

In a medium mixing bowl, combine 13.6 oz flour and 0.3 oz salt.

In a separate bowl, add 5.4 oz stiff levain build and 7.4 oz water. Gently mix until cloudy -- will NOT be fully dissolved and that is fine

Add these wet ingredients to the flour/salt bowl. Mix until fully combined. A small amount of additional water can be added if too dry

Cover and let sit at room temperature for 12 hours

Scoop out dough into a floured surface. Gently press out dough into a roughly rectangular form around 0.5" thick

Fold dough in half along short side, then again along long side. Cover with plastic wrap and let sit for 15 minutes

Pick up dough and gently ball before transferring to a proofing basket (basket should be floured with rice flour). Cover with towel and let sit for 1.5 hours

Preheat oven around 1 hour before baking. 500F if not using a cloche, otherwise 450F. Pizza stone or cloche should preheat with the oven

After the dough has sat for 1.5 hours, transfer from proofing basket to oven

After 30 minutes, drop oven temp to 450F if not already.

After 15 more minutes, remove from oven and let cool for 2 hours before cutting
